Auto Immune Disease is a Killer TMI

Image
It never fails when I have to do something my stomach goes south. My work required me to help out with the student showcase. Around 3:30pm work took all the faculty and staff out for dinner at P.F. Changs. Just so you know P.F. Chang is really good about working with people who have Celiac Disease. I wasn't doing to bad until after dinner.  At 5:00pm, we had to set up the reception, red carpet, and merchandise table. 6:30pm the showcase started, but I ended up helping finish setting up the reception room. If I would have known that I wouldn't have worn my high heel boots. There were only two other people besides me who were helping set-up the reception. I was jealous of the rest of the faculty and staff who were able to sit in comfortable recliners having fun watching the students' films while I and two other staff members finished setting up the reception hall.   Due to my severity of Reflex Sympathetic Dystrophy and my back condition, I am unable to drive much.

Halloween Gluten Free List 2018

Image
Recently, I went to the Halloween Night at Greenfield Village. Throughout the park they had treat station which gave out candy. In the hotel, I poured out all the treats I got. Guess what?! All of the candy they gave out I could only have one piece of candy. I am glad I am 32 years old and can deal with the sadness, but if I was little kid I would be crying.  It makes me so frustrated with events like this who don't think about kids with food allergies. There is no reason why they couldn't hand out pencils, pens, history pamphlets about Halloween, Halloween pins etc.  Anyways now that I had my little sputtering. Halloween is a lot of fun except when you have food allergies. I am very proud our society is seeing this and started an awareness program called the Pumpkin Project by putting out a teal colored pumpkin on your front porch. This tells parents the person is handing out non-food items. Our society is slowly understanding food allergies, but it is still easy and

Chronic Ear Infections

Image
May of 2017 I had a really bad ear infection. I have had sinus infections all the time, but never ear problems. After a variety of antiobotics and ear drops it seemed to go away. Two months later I got another one. My ENT doctor put me back on some more antiobotics and ear drops. It went away again after a month of fighting it again. Then in August it came back again. This time it caused a couple of holes in my ear drum. My ENT said I need surgery. He told me he is going to repair the ear drum and put in a tube. I had to wait 2 1/2 weeks for surgery.  In the meantime he stuck some purple stuff in my ear. This caused my ear to be completely plugged.  Four days before my surgery I got into some gluten causing me to vomit. I was stupid and desided to do a paid taste testing thinking I could get away with it. I was completely wrong. The $30 I made was not worth it. Everytime I throw up it made me get really dizzy. The dizziness caused me to vomit some more. I ended up going to ER becau

Seeing Theatre Shows With Gastroparesis

Image
Last week Friday, I went to see a play my friend was acting in.  A good friend of mine came with his mother because I had two free tickets.  My stomach wasn't doing very good that whole day. Before leaving I had some of my favorite Progresso Soup (Rice Roasted Chicken Wild Rice). That was a huge mistake. I got to our seats. These seats are you typically theatre seats they are just basic chairs. It sort of like a black box theatre. The building only contains one exit out of the theatre. The worse part is the restroom is downstairs where the actors dressing rooms are. The show got started and my stomach started really getting worse. I was seated clear across the exit. The only way to exit is to walk on the stage area. On top of it, I was seated dead center and would have to climb over a bunch of people. It felt trap and my anxiety shot up. Finally, intermissio n came.  I hated leaving and not congratulating my friend as well as leaving my friend and his mom. But when you have to

What Could Have Caused Your Celiac Disease

Image
Celiac disease is serious autoimmune disease caused by an immune reaction to the ingestion of gluten. 40% of the population has one or both genetic biomarkers for celiac disease, but just 1% of the population actually develops the disease.  Researcher are getting closer to figuring out what could be causing Celiac Disease. According to this video scientists believe reovirus, which is a common and often harmless virus, might be causing the immune system to attack harmless food molecules, like gluten, triggering celiac disease.  Researching are continuing working on figuring out what is causing it in hopes of finding a cure.

Jennifer Esposito on Living with Celiac Disease

Jennifer Esposito is a huge inspiration. I found this video to be helpful in getting awareness out about Celiac Disease and the understanding that it is a hard disease to diagnose and has many symptoms. You don't have to have stomach symptoms to have Celiac Disease.

Things I Learned From An Ear Infection

Image
Lately, I have been dealing with a really bad ear infection that just doesn't want to go away. The frustration of all the steroids and antibiotic ear drops is getting me down.  Here are some things I have also learned from having ear infections: 1. Don't ever use cotton swabs. NEVER EVER. Using them will cause ear wax to be lodged in the eardrum.  2. Don't put cotton balls on the other part of ear to hold in the ear drops because particles from the cotton ball can and will attach to the thick liquid of the drops that drip down into the ear canal causing the bacteria and fungi to grow even faster as well as causing your hearing to be even worse.   3. Buy lots of perfume because all the vinegar that is squeezed into your ear will eventually come out.  4. The Ear doctor's big vacuum machine is your friend. It hurts like crap, but it relieves the pressure and allows you to hear a little better even though you think at any second he will suck your ea

The University of Chicago Celiac Disease Center is a premier research center for celiac disease in the United States and the world.  I received an article in my email about their a little bit of the research they are doing and what they are starting to find out. The more research we can get the more likely there could be a cure. RESEARCH IN PROGRESS... 1. Evidence that viral infections play a role in celiac disease. The prevalence of celiac disease continues to rise, suggesting that environmental factors must trigger and precipitate the disease. For a long time, it was suspected that viruses might play a role in celiac disease, and more generally in autoimmunity. Thanks to generous donations, we were able to initiate studies and obtain preliminary data that were critical for receiving NIH funding to study the role of intestinal viruses in celiac disease pathogenesis in collaboration with Drs. Terrence Dermody (University of Pittsburgh) and Ramnik Xavier (Massachusetts Gener

Second Best Gluten-Free Brownies- Aldi's

I have tried every type of brownies. My favorite brownie is the Betty Crocker's Gluten Free Brownies  but cost around $4.95. I have a second option for brownies. Aldi's Gluten Free Brownies taste amazing and they are somewhat cheaper. These are great it you are going to a church picnic and want to share it with others. These brownies cost around $3.50. If you don't have an Aldi's near you, I'm sorry. I made this video with my mom to show you what it looks like.  Purchase Betty Crocker Brownies at: Betty Crocker Brownie Mix, Gluten Free, 16 Oz

Favorite Cookies

1. Goodie Girl Crunchy Chaos If you like crunchy sugary cookies these are for you. I am not a huge fan of really crunchy chocolate chips until I had these. Goodie Girl Cookies - Crunchy Chaos - Gluten Free - 19 oz Family Pack 2.  Kinnikinnick Kinnitoos Chocolate Creme Sandwich Cookies These remind me so much of Oreos cookies. They are amazing to dunk in milk. They don't get soggy instantly until it hits your mouth. They are good without dunking them as well. They also don't have an unpleasant aftertaste that some brands such as Walmart's brand has. I wish they would start coming up with weird filling flavors that Oreos do such as Mint, Strawberry, Birthday Cake, peanut butter, Raspberry, Marshmallow, Double Stuff. This would make me so happy.  I see all these guess what this Oreo filling flavor YouTube videos and wish I could do that. Jennifer Esposito's Battle w/ Celiac Disease

Image
I was searching things for a school project and ran into a Katie Couric interviewing Jennifer Esposito about Celiac DIsease. You might Jennifer Esposito from Samatha Who?.  Click Here to see the video: https://www.youtube.com/watch?v=ae7wjpp7MIk I love how she really stressed this is an auto-immune disease and not some fade diet to loose weight. Yes some do loose weight from going on a Gluten-Free diet, but the reason why they are loosing weight is because of being on gluten-free diet. isn't a fade diet. She also explained how you don't have to have the stomach symptoms to have Celiac Disease. This video is about 8 minutes and twenty seconds. Its short video, but does a great job at really explaining Celiac Disease. She has a book out called: Jennifer Esposito's Journey with Celiac Disease. You can order it on Amazon.com. Click below.

Pizza Time!

Image
I love pizza. A lot of restaurants and fast food pizza places are now caring a Gluten Free pizza. It is very exciting to see so many restaurants and pizza places serving Gluten Free pizza.   These types of pizza restaurants have a huge risk of being contaminated. The restaurants pushes people with Celiac Disease or severe gluten sensitivity should not order a pizza. I know that just a size of a tiny head of pin can cause a lot of damage, but I am not too scared. To me I look at it no different then my kitchen. My family isn’t gluten free so my kitchen and condiments runs into the risk of contamination.   It is up to you if you want to risk it or not.                           I have had two Georgio’s Gluten Free Gourmet Pizza now and have had no problems.   Keep in mind everyone is different. Just because I didn’t get any symptoms doesn’t mean you will. Georgio’s Gluten Free Pizza is so good. I would give it 5 stars out of 5. Webs
